Coconut Macaroons

Egg Whites, 4
Granulated Sugar, 5 oz.
Salt, 1 pinch
Put the egg whites in a bowl, add the salt and whisk until foamy (hold a spoonful upside down; it should not drop off. ) Add the sugar gradually while mixing and continue mixing for about 5-10 minutes until the sugar is disolved. Taste.

Coconut Macaroons
Make a meringue.  Add 14 oz. of coconut flakes to the meringue. Form balls 1.5” diameter. Put on a greased baking tray and bake at 370º F for 10 minutes (light brown color).
